Ingredients

  • 1.25 lb ground beef

  • 1 small can of green chilis

  • 1 onion of your choice (chopped)

  • 1 bell pepper (chopped)

  • Shredded cheese of your choice (2 handfuls)

  • ¼ c Taco seasoning

  • 1 can Refried beans (cook per can directions)

  • Flour tortillas

  • 1 large can of enchilada sauce

  • Kimo’s ONO Grindz Chili Pepper Water

Preparation

  1. Brown the ground beef in a pan.

  2. Sautee green chilis, onion, and bell pepper in the beef fat over medium heat.

  3. Add cooked ground beef and veggie mix into a mixing bowl and combine with taco seasoning.

  4. Assemble enchilada: on a tortilla add refried beans, beef, and veggie mixture, and shredded cheese then fold close.

  5. Place in a 13x9 cooking dish (spray with cooking spray).

  6. Continue assembling enchiladas until the dish is full (1 layer only).

  7. Add enchilada sauce on top. Place in a 350-degree oven for 20 minutes.

  8. Remove from oven. Add the remainder of the enchilada sauce then top with lots of shredded cheese.

  9. Put back in the oven just long enough to melt the cheese, approximately 5 minutes.

  10. Add some guacamole and sour cream and don’t forget Kimo’s ONO Grindz Chili Pepper Water.
