Ingredients

  • 1c of orzo pasta

  • 1 cucumber

  • ½ onion of your choice (we use Vidalia) chopped

  • Cherry tomatoes

  • Olive oil

  • Balsamic vinegar

  • Salt and pepper to taste

  • Optional:

  • Green, red, orange, or yellow peppers

  • Feta, goat cheese, or mozzarella (if you’re not keeping vegetarian)

  • Kimo’s ONO Grindz Chili Pepper Water

Preparation

  1. Cook orzo according to box directions.

  2. Strain the orzo with a mesh strainer and let sit for at least 5 minutes.

  3. Cube the cucumber and onion. Cut peppers if desired.

  4. Add cucumbers, onions, and peppers to the bowl of orzo.

  5. Let sit for at least 5 minutes or even overnight.

  6. When ready to serve, spoon orzo salad into bowls, add halved grape tomatoes and drizzle with olive oil and balsamic. Add salt and pepper to taste.

  7. If you’re not vegetarian and want some cheese, goat cheese, feta, or mozzarella goes great with the salad.

  8. Splash on the flavor of Kimo’s ONO Grindz Chili Pepper Water of your choice and enjoy.
