Ingredients
4 medium sweet potatoes, diced
8 small corn tortillas
1 can black beans, drained
1 avocado, sliced
2 tomatoes, diced
1 onion, diced
Juice of 1 lime
2 tbsp Kimo's ONO Grindz Original Chili Pepper Water
Salt to taste
Preparation
Roast sweet potatoes at 400°F until tender, about 20-25 minutes.
Mix diced tomatoes, onion, lime juice, and Kimo's ONO Grindz Original Chili Pepper Water to make salsa in a bowl. Add salt to taste.
Assemble tacos: Layer black beans, roasted sweet potatoes, and avocado slices on corn tortillas.
Top with the homemade salsa.
