Ingredients

  • 4 medium sweet potatoes, diced

  • 8 small corn tortillas

  • 1 can black beans, drained

  • 1 avocado, sliced

  • 2 tomatoes, diced

  • 1 onion, diced

  • Juice of 1 lime

  • 2 tbsp Kimo's ONO Grindz Original Chili Pepper Water

  • Salt to taste

Preparation

  1. Roast sweet potatoes at 400°F until tender, about 20-25 minutes.

  2. Mix diced tomatoes, onion, lime juice, and Kimo's ONO Grindz Original Chili Pepper Water to make salsa in a bowl. Add salt to taste.

  3. Assemble tacos: Layer black beans, roasted sweet potatoes, and avocado slices on corn tortillas.

  4. Top with the homemade salsa.
